The Real McCoy - Alaska Salmon
Alaska is a unique place, differing quite a bit from the other forty-nine states, and is filled with natural wonders that delight visitors and residents alike. One of the greatest of Alaska's possessions is the delicious salmon that populate its waters. Once you have tasted genuine Alaska salmon, your mouth will be ruined for any other kind of salmon. The unique and natural flavor of wild Alaskan salmon is unrivaled by any other salmon on the market. Fresh Alaska salmon needs almost no garnish to add to its natural taste and it makes a wonderful center piece or addition to any meal.
Along with its amazing flavor, Alaskan salmon does wonders for the body and mind. Salmon is known as a superfood thanks to its abundance of omega-3 fatty acids. These fatty acids help improve circulation as well as brain function, and all of these healthy helpers are packed into the low fat, low calories meat of salmon. There are an abundance of recipes that allow you to play up the wonderful, natural flavor of genuine Alaska salmon, while remaining on the healthy, low fat end of the food scale. One great recipe is for grilled salmon fillets on a bed of couscous and vegetables.
For four servings of this dish you will need four, five ounce Alaska salmon fillets, six ounces of couscous, four ounces of sliced mushrooms, one peeled and slice large red onion, two sliced medium courgettes, two tablespoons of French dressing, one sliced large red pepper, a handful of chopped chives and basil, two tablespoons of sunflower oil, and salt and pepper to taste. Follow the directions on the couscous package for its basic preparation. Pre-heat a pan over medium heat with the oil and place the vegetables in to cook for eight to ten minutes. Brush the genuine Alaska salmon with the seasonings and oil, placing the fillets in the pan and cooking them for six to eight minutes or until the meat flakes easily when tested with a fork and is a nice opaque color.
Place the cooked vegetables and couscous in a large bowl, adding the chives, basil, and French dressing and tossing them all together. Place the cooked salmon fillets on top of the tossed couscous and vegetables, finishing with some basil leaves for garnish. This simple and tasty recipe leaves your heart and mouth satisfied and working beautifully!
