Oceanic Delight

Mexican food is arguably some of the best in the world as it is never short on flavor or portion size. Among the delicious array of Mexican food tacos are a definite fan favorite with fish tacos being one of the most popular varieties. Traditional fish tacos take a nice mild white fish and deep fry it. While the traditional recipe is amazing it is not exactly easy on the arteries. Luckily there are great healthy alternatives such as halibut tacos. Halibut is a wonderful, light white fish that can be dressed up with all kinds of spices and makes the perfect filling for healthy, delicious fish tacos.

As important as the fish is to fish tacos, the sauce is equally as essential. The sauce is where you really have the freedom to play around with a lot of flavor. Engaging different herbs and spices you can play up the mild flavor of the fish in whatever fashion you like. An especially enjoyable way to prepare halibut is by employing the help of citrus flavors. One great recipe is for halibut tacos with a yogurt-lime sauce. This low fat, low calorie culinary delight is great for a simple family dinner or when entertaining guests.

To make four servings you will need 1 ½ pounds of skinless halibut fillets, ¼ teaspoon ground pepper, ¼ cup fresh squeezed lime juice, ½ teaspoon salt, 1 teaspoon sugar, 1 cup plain fat-free yogurt, 8 six inch corn tortillas, 1/8 teaspoon chili powder, 2 cups shredded cabbage, 1 avocado sliced into 16 pieces, and ¼ cup fresh chopped cilantro. To begin preparing the halibut tacos, place the fish into a shallow bowl and pour three tablespoons of lime juice, ½ teaspoon of salt and pepper over the fillets, cover the bowl and allow it to refrigerate for twenty minutes.

Then mix one tablespoon of lime juice with the yogurt, sugar, ¼ teaspoon salt, and chili powder, allowing this mixture to chill as well. When the halibut has almost finished chilling, heat a large skillet over medium-heat and then place the fillets and marinade inside the pan. Cover the skillet and allow the fish to cook for about eight minutes until the flesh flakes easily. Once the halibut is done cooking, cut the fillets into eight identical pieces. To finish the halibut tacos, warm the tortillas in a different pan over a low-heat and top each one with roughly two ounces of fish ¼ cup shredded cabbage, two tablespoons yogurt sauce, two avocado slices, and 1 ½ teaspoons of cilantro for a little extra zest. This delicious high protein, low fat recipe is a great spin on a classic Mexican creation.
