Angels on Horseback

I have read somewhere that the basic recipe for angels on horseback dates back to Victorian times, if not earlier. I can not be sure if this correct, but it does plausible. In any case, Angels on horseback is a wonderful starter or appetizer. It is very easy to make, can be prepared and cooked in just a few minutes, and is ideal for special occasions or when you have guests.

The basic idea of the recipe is to tightly wrap oysters in streaky bacon, and then cook them that way.?The oysters of course need to be shucked (removed from the shells) before preparing the dish, and I think it also helps to stretch out the bacon using a knife before wrapping it around the oyster.?You can use cocktail sticks (which I recommend that you soak in water first) to hold the bacon and oyster parcels together. Some people like to add Tabasco Sauce, or even things like Parmesan cheese to their bacon and oyster parcels, but personally I think seasoning, a little paprika and a bit of parcel is all that is needed.

You can cook the parcels in a broiler, on a grill (they can even be barbecued), or simply bake them in the oven. One thing to remember is that fat from the bacon can easily flare-up, which is why I prefer oven cooking them.?You also need to make sure that they are cooked all the way through before eating them - raw or undercooked bacon is not good for you!

To serve, simply serve "as is", or you can remove the cocktail sticks and put your angels on toast or crusty bread, perhaps garnished with a little watercress.?Wonderful!
